For years now, we’ve been making mock chicken salad starring LightLife Classic Tempeh, so we’re thrilled to share our recipe with y’all today!
Tempeh is a superfood that’s packed with protein. In this dish, we cube the tempeh right out of the package and add it to the recipe uncooked, but you can sauté it beforehand in olive oil as well. We’re always looking for satisfying, no-oven vegetarian dishes, especially in the summertime.
Add the salad to a bowl of baby lettuce or scoop it into a croissant. Decadent and balanced, just our style.
#ad | Tempeh Mock Chicken Salad
Ingredients
1 (8-ounce) package tempeh, cubed (raw or sautéed)
1/2 cup toasted walnuts
1 cup halved red seedless grapes
1 cup sliced celery
2 green onions, sliced
2 stems fresh tarragon, leaves finely chopped
1 tablespoon spicy brown mustard
1/4 cup plant-based mayonnaise
Juice of 1 medium lemon, about 1 tbsp.
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper
Optional, for serving: lettuce, sliced tomato, 4 croissants
Serves 4
Directions
1. In a large mixing bowl, combine the tempeh, walnuts, grapes, celery, green onions, tarragon, mustard, mayonnaise, salt, and pepper. Stir gently to combine.
2. Serve a generous scoop or two over lettuce or scoop into 4 split croissants with lettuce and tomato slices.
